To the rear, three sets of stairs trace the workflow of the site. Leading to the beef boning room, the top pig floor, and the mutton kill floor. In the lower right, the offal room entrance marks a space many remember for its confronting first tasks, from packing sheep brains to preparing casings for sausage production.
On the left, the old store and by-products building once kept the site stocked, while behind the camera stood the smoke shed, where workers took short breaks between demanding shifts. Every surface and structure in this yard played a part in the plant’s tightly coordinated daily rhythm.
